Potentialités d'utilisation du nez électronique à spectromètre de masse pour la caractérisation de la fraction volatile du liège oenologique

Abstract : This thesis work deals with the possibilities of using two techniques of headspace - mass spectrometry (DHS-MS and SPME-MS) to the characterization of the origin and the quality of cork wine stoppers by the analysis of their volatile and semi-volatile fraction. The preliminary stages necessary for the implementation of DHS-MS and SPME-MS allowed the determination of the parameters of the analysis according to the following criteria : simplicity, speed of the analysis compared with classical techniques (GC-MS and sensory analysis) and the stability of the system as evaluated by the coefficient of variation and an analyse of variance. These two techniques were then used in two distinct directions of studies: DHS-MS: The potential of this technique was assessed on samples of champagne stoppers through two discrimination studies (origin and the quality control). The multivariate analysis used (ACP and PLS) were effective for the exploitation of the results. However, the data treatments showed that the chemical information related to the differences between the samples can be masked by mass spectral peaks of the non characteristics compounds or of the compounds present in large amounts in the headspace of DHS-MS. Data filtration can then be a solution to better target the discriminant information. In addition, fingerprints of the sample analysed at different periods may be a source of variability that decreases the predictive power of the statistical model. In this case, the update of the model offers an efficient solution to the problem. The SPME-MS: The potential of this technique was assessed on samples of cork boards through a study of the geographical discrimination of the samples. The results showed that the technique gave a clear separation of the African from the Iberic samples. Despite having relatively short analysis times of 27 and 12 min per samples, DHS-MS and SPME-MS present limitations and difficulties that we have tried to define and discuss throughout this work.
