Influence des protéines laitières sur le pouvoir antioxydant et la biodisponibilité des polyphénols du café

Abstract : The aim of this study was to assess the effect of usual coffee consumption conditions, such as the addition of milk and spray-drying, on beverage antioxidant power and health effects. Interactions between caffeoyl-quinic acids and milk proteins of the beverage were shown, but did not seem to have any effect on beverage antioxidant power and proved to be slightly destroyed during digestion. Coffee chronic consumption enhances plasma antioxidant status in the rat, but this effect is weakly correlated with plasma phenolic acids contents, and no milk or spray-drying effect could be assessed. As a conclusion, some interactions occur in coffee and milk beverage, but have no significant effect on health benefits obtained from coffee drinking.
