Statistique Bayésienne et Monte-Carlo de Second Ordre pour l'évaluation des risques microbiologiques. Le cas de Listeria monocytogenes dans les produits de IVème gamme

Abstract : The bacterial foodborne pathogen Listeria monocytogenes is a concern in minimally processed fresh vegetables for its ability to grow on fresh vegetables, even at low temperatures. The aim of this work is to build a model for the assessment of microbial risk on minimally processed vegetables. Firstly, the input parameters of the model are estimated through a bayesian inference. Secondly, second order Monte Carlo simulations are performed to estimate the exposure and the risk of listeriosis of the consumers. These techniques allows to propagate separately the variability and the uncertainty along the food chain. In particular a model estimating the distribution of microbial contaminations specifically accounting for low concentrations has been developed. The effect of several scenarios (maximal L. monocytogenes growth depending on initial concentration, consequence of the elimination of chlorine from the industrial process) on the risk of listeriosis following consumption of minimally processed fresh salads has been evaluated and discussed.
